I got this from my WW leader a while ago, but never made it. I finally did and it is really good if you like brocolli and spicy.
Brocolli cheese soup
1 cup = 1 point
2 bags (1lb. each) frozen brocolli florets
3 cans (14.5 oz each) LF chicken broth
1 can rotel tomatoes with green chilis
10 oz. light (now it is labeled 2% milk) velvetta cheese
Mix first three ingredients in a large pot. Bring to boil and turn down low to simmer - cook about 25-30 minutes until brocolli is tender.
Cube velvetta and add to pot - stirring just until melted and you are ready to eat.
If you dont like spicy, you probably could substitute a small can of plain diced tomatoes.

i made this soup lastnight and i love it. i love brocolli and cheese together. instead of brocolli florets i used chopped brocolli. very yummy thanks for sharing
