Jean Cats Favorites - Thread 5
JeanCats (Jeanetta’s) Favorites was once called JeanCats Finds. The name has been changed because JeanCat eats many low salt, low/no fat and low no sugar foods which may not represent a find for most Weight Watchers. Jean Cat MUST eat healthier for health reasons.
In addition, Jean Cat looks for helpful information on the internet, links, videos, podcasts, and recipes. Some of the recipes that JeanCat shares are directly from a site, in which she will always give the site addy or her own which she places the name JeanCat in front of it.
In this weeks thread you will find:
Pasta, Bread, Drink, Tea, Deli Meat, Salad, Soup of the Week. Together they could make one great meal! If you have enough points!
I include my own recipe for a white sauce for pasta and my adaptation of Woman’s Day Chicken Sorrento.
Sorrento Italy is a beautiful coastal town in the Bay of Naples in Italy. Dean Martin sang about it in one of his love songs. Sorrento is ‘one of the most sought after locations in Italy for destination weddings, this coastal gem offers breathtaking sunsets, picturesque ocean views and the fragrances of orange and lemon orchards.” While more beautiful, it’s aerial view harbor reminds me somewhat of Catalina Island off the coast of California. Please take a trip with me and visit Sorrento, Italy.
Pasta of the Week: Trader Joe’s Organic Sprouted Wheat Pappardelle Pasta
1 cup cooked or 2 ounces dry
Fiber 3 gram
Points = 4 pts
This is about 3/8 to 1/2 inch wide pasta noodle
Great for Core, Vegan diet or Healthy Flex points.
Has a great recipe on the back.
Top with: JeanCats Creamy Italian Sauce
1 cup your favorite FAT FREE Italian Dressing
1 tsp of Italian Seasoning
1 /2 tsp of garlic/herb powder
1 cup Fat Free half and half 4 ounces of Fat Free Cream cheese.
Heat, but do not boil. Pour over HOT drained noodles.
Calculate points based upon dressing.
JeanCats White Sauce (omit/leave out the Italian dressing)
2 tsp of Italian Seasoning
1 tsp of garlic/herb powder or 4 cloves of fresh minced garlic
1 cup Fat Free half and half
4 ounces of Fat Free Cream cheese.
4 ounces chicken broth (low sodium is best)
Heat, but do not boil. Pour over HOT drained noodles., double the amount of Italian Seasoning and garlic.
Optional: 1 or 2 cups sliced mushrooms, re-hydrated sun-dried tomatoes, chopped zucchini,
Optional: 1 or 2 tsp of olive oil
To the Alternative recipe only:
Optional: JeanCats White Wine Sauce: Add ½ cup of dry white wine
Optional: JeanCats Vodka Sauce: Add ½ to 1 cup vodka and 1 can diced tomatoes (canned or crushed plum tomatoes), eliminate 2 ounces of half and half.
If you do the above you may wish to thicken with 1 or 2 tsp of flour to sauce. Note: The color of this sauce is a pink, not white or red.
Adjust points for any alterations or options taken.

Food for Life Ezekiel 4:9 Sprouted Whole Grain Bread
1 point each slice (highly textured bread, great if you like toasty consistency and nutty flavor). Great Core Food, Vegan diet and Healthy Flex Points
1 slice = 80 cals
1 pt per slice
Great bread for toasted sandwiches. Love it with tuna or salmon salad/spread on hot toast.
Drink of the Week: Canned Minute Maid Drinks
I now take these to work and keep a few in the trunk of my car. I am not much on water. When I get to a Carl’s I usually get the BBQ chicken on Whole wheat and I expect the 5 cal Lemonade to be there. But lately the fountain has been not working/out of stock.
Here are the new flavors only 5 calories per 8 ounces, each can is 12 ounces or 7.5 calories:

Because it has caffeine in it I will only use it on a Friday or Sat. Currently I use the decaffeinated tea. This is my first week and so far it moved me off of a plateau.
Salads of the Week
TJ’s Greek Garden Salad . With out dressing with the Feta cheese (2.5 grams of fat) = 2 points.
Add the dressing with the salad = 4 points (6 grams of fat)
I have eaten this without the dressing. I used the feta cheese with every bite as a dressing.
Soup of the Week
Trader Joe’s FF Low Sodium Chicken Broth! Probably an old find for most of you. But I mainly mention it to help out newbies.
Great as a vegetable soup base. Great in Aimee’s mashed potatoes, great as a gravy base. Great alone! Comes in a carton. Some times hard to find/notice because very little difference in the packaging from the regualar.

Fat Free Recipe Link of the Week – I found this by googling the words FAT FREE
Mexican corn bread loosely adapted from the Albers package
1 1/2 cup yellow corn meal
1/2 cup whole wheat flour
1 tablespoon baking powder
1 teaspoon salt (I leave out)
1 egg equivalent
1 cup nonfat milk
1 16 or 17 ounce can cream-style corn
1/4 cup chopped onion
2 tablespoons chopped green chilies ( I use Ortega brand)
minced jalapenos to taste
couple tablespoons chopped red bell pepper (just for color, can omit)
mix together dry ingredients
mix together wet ingredients
blend together, pour into
8 inch square baking pan, (sprayed lightly with cooking spray)
bake 400 F for 35 to 40 minutes
goes great with a bowl of beans.

Recipe Site of the Week: Woman’s Day Three Ingredient Recipes . This site will give you some ideas to change up your meals. I adapted the recipe below:
JeanCats Adaptation of Woman’s Day Chicken – Sorrento http://www.womansday.com/recipes/9916/chicken-sorrento.html
4 boneless, skinless chicken breast halves (about 5 oz each)
1 bottle (8 oz) Fat Free Italian dressing
1 bag (16 oz) frozen stir-fry vegetable blend
2 Tbsp FF Cream Cheese
2 Tbsp FF Half and Half (optional)
Active: 15 min/Total: 15 min
1. Sprinkle chicken with 1/4 tsp salt and 1/8 tsp pepper. (eliminate salt for Low Salt diets)
2. Heat 2 tsp oil in a large nonstick skillet over medium-high heat. Add chicken; cook 2 minutes on each side, or until golden.
3. Pour dressing on chicken; turn to coat. Cover, reduce heat and simmer 5 minutes.
4. Add frozen vegetables, cover and cook 5 minutes, or until chicken is cooked through and vegetables are crisp-tender.
5. Remove from heat and add 2 Tablespoonsful of FAT FREE Cream Cheese and 2 Tablespoonsful of FAT FREE half and half (optional)
6 or 8 points depending on size of chicken breasts
