Aimees Refried Bean Soup

I made Aimees Refried Bean Soup today and forgot how good that really was.

I didn't have the FF Beans so I used LaPreferdia (sp?) Zesty Beans and eliminated the garlic and onions.

Absolutely delicious.

Aint that something, i was looking throught Aimee's cookbook and bought stuff to make the Potato Soup & The Taco Soup.

I made this today and I also forgot how good it is..Hubby and I ate some for lunch today and I'll take some to work with me tomorrow...thanks for reminding us how good it is.

What is the recipe...it's freezing here - could use some soup!

I did a cut/paste--I think this is the one she's referring to.


Refried Bean Soup

2 (14.5 oz.) Cans Diced Tomatoes with Green Chilies
2 Cloves Garlic, minced
1 Cup Onion, finely chopped
2 (16 oz.) Cans Fat Free Refried Beans
3 Cups Fat Free Chicken broth, divided

Combine tomatoes, garlic, onion and 1 cup of broth in a large pan; boil for five minutes, stirring often. Stir in beans and broth; simmer over low heat for 20 minutes, stirring often.

Serves: 10 (1 Cup Each)
Per Serving: 110 Calories; trace Fat (0.2% calories from fat); 7g Protein; 19g Carbohydrate; 6g Dietary Fiber; 0mg Cholesterol; 725mg Sodium. Exchanges: 1/2 Vegetable.
