Lunch:
Made up a recipe for bean enchiladas - only 4 pts for a very filling portion.
Took 2 small corn tortillas (1 pt)
1/2 cup ff refried beans (1 pt)
1/4 cup ff cheddar cheese (1 pt)
enchilada sauce (1 pt)
Put beans inside the tortillas with a splash of sauce - rolled up - topped with more sauce and the cheese. Baked at 350 for about 20 minutes until hot and melty. Served on a plate with salad topped with some salsa. Yummy!

mock mashed potatoes (1/2 potato and 1/2 cauliflower) havent made this before will let you know how it is.
