Recipe search....

Hi! I am new to this, but hope you don't mind if I
give it a try. I am searching for a recipe for blue-
berry muffins. It may have been given at a meeting
at some point and is not the one that uses yogurt.
The muffins have a 3 point value. Can anyone help
me? Thanks!

Nellie, welcome to our group. Sorry I can't help with the recipe but I'll look in some of my cookbooks later today.

Nellie, I am afraid I don't have the recipe you are looking for either, but let me tell you what I have found that might help! The Betty Crocker blueberry muffins that come in the pouch have a points value of 3 for a nice sized muffin. The pouch makes 6 muffins and all you add is water.

I found a homemade recipe for you. Hope this is what you were looking for.


Weight Watchers Blueberry Muffins recipe
Makes 20 muffins

Ingredients
3 cups natural bran
2 cups whole-wheat flour
1/2 cup granulated sugar
1 tablespoon baking powder
1 teaspoon baking soda
2 eggs, beaten
2 cups buttermilk
1/3 cup vegetable oil
1/2 cup molasses
1 cup fresh blueberries or frozen blueberries

Preparation
1. In large bowl, combine bran, flour, sugar, baking powder and baking soda.
2. In another bowl, mix together eggs, buttermilk, oil and molasses.
3. Pour egg mixture into bran mixture and stir to moisten.
4. Do not overmix.
5. Fold in blueberries.
6. Spoon batter into nonstick or paper-lined large muffin tins, filling almost to top.
7. Bake at 375 degrees for 25 minutes, or until firm to the touch.

WW POINTS per muffin: 3
Nutritional information per muffin: 161 calories, 5g fat, 4.3g fiber

Wow, Carrie!! That is one healthy muffin recipe! See,
I got myself in a bit of a "jam." I use a recipe from
a WW cookbook and have liked it very much. A WW friend had given me a recipe as well, and I no longer
have it in my possession. She has misplaced hers and
asked me last week if I could bring my copy to next
week's meeting. I will take this one and see how she
feels about it.
