I had great memories of this pie. It was a favorite breakfast for me when I was on Diet Workshop back in the 70's. I couldn't find the recipe so yesterday I made it from my memory (can't remember what I had for breakfast but can remember 30+ years ago)
The original uses a large can of pineapple. Since I'm on Core I drained the pineapple and replaced it with equal amt. of water. I think it lost a little of the pineapple flavor so next time may add some pineapple extract.
Large can crushed pineapple
16 oz small curd cottage cheese
1 egg
2 pks. unflavored gelatin
1 tsp vanilla
1/4 cup pourable Splenda
cinnamon
Sprinkle gelatin over pineapple and let set for a minute. Stir in rest of ingred.
Pour into a round cake pan (I use a glass pan). Sprinkle cinnamon on top.
Bake at 350 for 30 minutes. (It will still be a little loose when coming out of oven). Let cool then refrigerate.
Tobe, I'm on Core so I didn't figure out the points (everything is Core) The Points would depend on what type cottage cheese and pineapple you use. It's really a nice warm weather breakfast.
