Cheesy Veggie Soup - repost from April as promised!
I got this from a meeting several years ago.
Cheesy Veggie Soup
3 cans FF chicken broth
1 can rotel (use whatever kind for how spicy you like it)
2 bags of California Blend Frozen Veggies
10 oz. of Velveeta 2% cheese
Dump the broth, rotel, and veggies into pot and bring to boil. After it comes to boil, put on simmer and cut up the cheese into small chunks and let it melt into the soup.
1 cup = 1 pt.
Some people like it over a baked potato, but I just like mine in a bowl.
