More like a quiche than a bread - Angie sorry it took me so long to post this.
1 cup egg substitute
3/4 cup fat-free cottage cheese
1/2 cup fat-free sour cream
2 tablespoons butter, melted
3/4 teaspoon salt
1 cup finely chopped onion
1 (10 oz.) package frozen chopped broccoli, thawed and drained
1 (8 1/2 oz.) package corn muffin mix (such as Jiffy)
Preheat oven to 400 degrees.
Combine first 5 ingredients (egg substitute thru salt) in a large bowl. Stir in the onion, broccoli, and muffin mix; stir until well blended. Pour into a 13 x 9 inch baking pan coated with cooking spray. Bake at 400 degrees for about 30 minutes or until set and lightly golden brown on top.
Yield: 12 servings = 3 points each

If you don't like broccoli, substitute another veggie. I have made with spinach.
