A new recipe that we had for dinner that I made up today! YUM!!

I made this recipe up and it has a wink and a nudge to Italian Wedding soup. It is thicker though thanks to the barley and oh so delish! Enjoy!

1 1/2 pound(s) boneless, skinless chicken thigh(s)
16 oz chopped frozen spinach
1 pound(s) baby carrots
1 medium onion(s)
3 clove(s) garlic clove(s)
1 cup(s) uncooked barley
10 serving(s) water, boiling
8 cube(s) chicken bouillon cube



Saute chicken until just white, add carrots, onions and garlic and saute and until tender. Add water and bouillon and bring to a boil. Add barley and turn down to a simmering bubble and let cook for 45-60 minutes or until barley is cooked. Meanwhile, thaw spinach in microwave and then thoroughly twist in a towel to drain liquid. Add at the end of cooking and serve. Each serving is 1 cup. Perfect with garlic toast made with lo-cal bread, spray butter, and garlic.

Sounds so delicious. Now I must buy barley next time at the grocery.

You are so welcome! I plan to make this again this week. My 9 yr DS has requested the "spinach" soup! LOL!! Imagine that, a child requesting such a thing! I love this WW program because it is teaching my kids to love things that many kids hate.
