From my WW leader. She said it is like a corn pudding. It's a southern dish.
1 Cup yellow cornmeal
2 Cups water
1 Cup ff milk (cold)
3 egg whites
pinch of crushed red pepper flakes
1 tsp. cilantro
1 cup frozen corn
2 cups ff shredded cheddar cheese
Whisk together cornmeal and water over high heat. Reduce heat to medium when boils. Continue to whisk until thick. Remove from heat and slowly add milk. Add corn, spices and cheese, stir thoroughly. Whip eggs separately and fold into mixture. Pour into a greased (cooking spray) 8x8 baking dish. Bake at 400 for 30 minutes.
