Pasta with plum tomatoes, balsamic vinegar, fresh oregano, olive oil, red pepper flake infused toasted garlic oil, and mozzarella cheese chunks
Cook pasta according to package directions.
Put 3 tbs olive oil over low heat
Slice up 3 cloves of garlic, drop into oil and let toast just until the edges are light brown
Remove from heat, add a dash of red pepper flakes and swirl.
While garlic is toasting dice up plum tomatoes (less moisture) and put in a bowl.
Add about 1 tbs balsamic vinegar
Chop and add fresh oregano
Pour garlic oil over tomatoes
Add a dash of salt
Cube up mozzarella and toss with tomatoes
Add pasta straight from the pot
I used 2 oz of pasta (bowtie) for a 1 serving, 1oz of part skim Mozzarella and two 2 tsp of oil. (TOTAL 7pt and it was a big bowl) If I were to make it for dinner I would add 2 oz of chicken sauteed in the garlic oil.
I didn't have plum tomatoes so I used on the vine tomatoes and let them sit in a strainer for a minute to get rid of some of the juice.
