Must be the day for recipes. Saw Cheryl's recipe for fudge, looks interesting.
This morning I had pancakes and they were good.
1/2 cup oatmeal (I used the quick oats but think instant would work)
1/2 cup fat free cottage cheese (could use other fat level but count points)
4 egg whites (think I'd use Eggbeaters if I had them on hand)
vanilla, cinnamon, splenda (I used a splash of vanilla, about 1/4 tsp cinnamon and one pack of Splenda)
Blend in blender till smooth. Cook like regular pancakes, should make 6 if using 1/4 cup batter for each.
I had them with lite pancake syrup and they were delish. I ate the whole recipe but now they are swelling in my tummy I could have probably eaten less. Jim even tasted them and gave them his OK.
I'm on Simply Filling so the only think I had to count was the 2 points for the syrup.
I go through spurts where I love pancakes and eat them everyday for lunch. I am used to the SF syrup now and the regular tastes WAY too sweet. There are many days that I just add a packet of splenda to my batter and eat them plain.
There is one thing that I cannot get used to and that is SF syrup....tastes strange.
I measure out the Light (I love the light) and just dip the bites into it...rather than pour half the bottle onto the cakes....that was my old way of eating pannacakes (as my little one calls them), LOL.
