Curried Egg Salad

Here is another thing I have made quite a bit of recently. Originally from 101 cookbooks but modified:

I use 1 full egg and 1 extra egg white - both hard boiled.

Take the yolk and mash it with 1-1.5 tbsp of plain yogurt, curry powder and salt to taste (sometimes I add chili powder for a bit of zing).

Fold in 1 tbsp raisins, some chopped onion, chopped celery and a bit of apple (the 'mix-ins' really depend on what is available in the fridge).

Chop the egg whites and fold them in last into the mixture. Top off with chives.

The salad itself is 2.5 points or so. I will eat this on a 2 point pita or some Wasa crispbreads. Makes for a filling lunch.

Sounds interesting. I'm not much of a curry fan but might give it a try. I love egg salad but hardly ever make it. I don't know why since it is so easy to make.
