I haven't tried this yet. It is on my list of lunches to make. I got the recipe from the WW Core message board.
Spinach pie
1 (10 oz) package frozen chopped spinach, thawed and drained
1/2 c FF cheddar cheese, shredded
1 c FF cottage cheese
2 garlic cloves
3 eggs
1/2 tsp salt
1/4 tsp pepper
Preheat oven to 350*. Mix all ingredients; pour into a Pam-sprayed pie dish and bake for 45 minutes. Cut into wedges. Serves 4-5
I've added stuff through the months of making this and made the temperature a bit higher, I like it crunchy.
I read last week where someone used ff ricotta instead of ff cottage cheese and a while back I even saw other add-in's.
So, I made it Monday night w/ ff ricotta and sauteed shallots and Canadian bacon. What a treat! It's much more dense with the ricotta cheese and the bacon & shallot combination - yum!
4 to 5 servings?????? That sounds so good that it might make WAY less than that for a spinach lover like me. LOL Thank you for sharing this, it sounds delicious. :)
